Easy Weeknight Meals Vol IV

Good morning friends! 

I wanted to get this recipe post up since some of you were asking about a few of these last week. I have gone back and forth about shooting and sharing one recipe at a time like I did previously did versus this format recently. The professional photos I used to take were clearly more beautiful but I am often cooking/sharing on stories in the evening in real time and hoped that these quick meals would prove to be more helpful to you all. Let me know if you have an opinion one way or another and maybe I will try to shoot some of my favorites over the weekend’s in the future! 

As for this week, I am happily recovering from the NSale slowly but surely! I was really excited about the new items this year and will continue to keep an eye on in/out of stock items for you all!

For now, on to the recipes! The Chicken Enchilada Bake was a random concoction after trying several enchilada recipes I didn’t quite love. The tortillas kept everything crisp and not soggy and it made for great leftovers! You could top with almost anything but hot sauce was good for us! 

 

Chicken Enchilada Bake

INGREDIENTS
 
  • Avocado or Olive Oil Cooking Spray
  • 1 Organic Rotisserie Chicken (Whole Foods is my fav)
  • 1 Can Organic Black Beans
  • 1 Can Yellow Corn (TJ’s is the best)
  • 1 Packet Frontera Enchilada Sauce
  • TJ’s Hot & Sweet Jalapeños to garnish
  • 1/2 cup Shredded Mexican Cheese
  • Valentina Hot Sauce (or whatever you prefer!)
  • Whole Wheat or Low Carb Tortilla’s
 
INSTRUCTIONS
 
  1. Preheat oven to 425 degrees. 
  2. In a pan, spray with cooking spray and warm over medium heat. Add shredded white meat from rotisserie chicken and enchilada sauce, stirring occasionally, about 5 minutes. Add black beans and corn till warm. 
  3. Meanwhile spray baking pan and pour chicken mixture evenly across bottom. Top with tortillas and then cheese and cook in oven for 10-15 minutes. 
  4. Add hot sauce and any toppings you like and serve! 

 

 

Empty The Fridge Bowl

INGREDIENTS
 
  • Shredded Organic Rotisserie Chicken (Whole Foods is my fav)
  • Organic Brown Rice (TJ’s microwave packets are the easiest)
  • Spiced Cauliflower (this is my mom’s recipe and perfect to meal prep at the start of the week)
  • TJ’s Zhoug Sauce
  • TJ’s Sriracha Ranch 
  • TJ’s Hot & Sweet Jalapeños to garnish
  • 1 Tsp Goat Cheese (I eliminated this the next time and it tasted the same)
 
INSTRUCTIONS
 
  1. Toss brown rice in Zhoug sauce as base of bowl. 
  2. Add all components on top plus Sriracha Ranch and any toppings you like and serve! 

 

 

Mediterranean Chicken Bowls

INGREDIENTS
 
  • Organic Chicken Breasts, cubed
  • Organic Brown Rice (TJ’s microwave packets are the easiest)
  • Spiced Cauliflower (this is my mom’s recipe and perfect to meal prep at the start of the week)
  • TJ’s Zhoug Sauce 
  • TJ’s Tzatziki Sauce
 
INSTRUCTIONS
 
  1. Preheat oven to 450 degrees
  2. Toss cauliflower and chicken in same seasonings and bake in oven for 25 minutes. 
  3. Toss brown rice in Zhoug sauce and top with chicken and cauliflower. 
  4. Add Tzatziki sauce and serve! Hummus, feta or even olives would be a great add too 😉
