Easy Lunch Hacks

Good morning! 

Can you believe it’s a new year? I for one am ready for a fresh start in 2022 and am looking forward to what’s in store for our little family. This week will actually be a bit of a busy one since the kids are going back to school tomorrow (they both start on Tuesday this week!), I will be back to work and we will be packing for our first trip without our kids that I can recall. 

We’ve been lucky enough to sneak away for a night here and there but our babymoon was cancelled at the very start of Covid and prior to that we had not left Zain for a relaxing getaway. I know I will miss my babies but I am beyond elated to get away with Trevor to celebrate our 10 year anniversary and truthfully just take a breather. A vacation with no alarm clock, responsibilities, or agenda sounds like heaven right about now. I will share more about this soon but today I wanted to tackle a quick hot topic and request in my DM’s. 

I try to share my random lunch/dinner ideas that end up being quick and tasty because I know that’s helpful, or at least I love when other people share theirs. I haven’t been as great about it lately because I have been trying to limit my screen time more consciously but thought I could share a few here in case you are looking for a quick meal that’s nutritious and will hopefully keep you full. 

 

 

Spicy Chicken Wrap

My recent fav! We use Olé low carb wraps and always have them on hand in the fridge. Then I bake 1 or 2 Caulipower Chicken Tenders (I prefer the spicy version) in the toaster oven at 420º for about 10 minutes, slice it and set aside to cool. Then toss some chopped iceberg lettuce in Bolthouse Farms Yogurt Ranch dressing and layer on wrap with chopped cherry tomatoes and add your chicken on top! Wrap it up and enjoy!

 

 

Veggie Crunch Wrap

A tried and true oldie. I do this with and without scrambled eggs depending on whether I want a breakfast feel or not. Toast a Dr.Praeger’s California Veggie Burger on 420º for about 15 minutes until nice and crispy and break into pieces to layer on yoru wrap. Add broccoli slaw (this provides the perfect crunch) and sriracha and you are good to go! 

 

 

Everything In The Fridge Bowl

This is another old favorite that always makes me feel satisfied! I start with brown rice (the frozen packets from TJ’s are great) and toss about a cup of it in a bit of TJ’s Zhoug Sauce. The sauce tastes very similar to an Indian Chutney so you could always improvise with whatever you want but I love the spicy base. Now you can keep it vegetarian or I like to add some rotisserie chicken, we always order one from the grocery for easy meals during the week! After that, I do exactly like the name implies and add almost anything I can find in my fridge that sounds good. This usually includes some veggies like sweet potatoes and broccoli, jalapenos, slaw or iceberg for crunch, and then top with either hot sauce or something I mix the Bolthouse Ranch with sriracha to make a healthier twist on a spicy mayo and drizzle over top!
