Happy Thursday y’all! I don’t know about you but for some odd reason Thursday’s have become my meal planning day. It doesn’t make a whole lot of sense but it is always the day I end up searching for new recipes for the week.
A few weeks ago, I got several messages from friend’s about how I needed to get an Instant Pot. I had a little bit about them but hadn’t ever seen one or tried anything cooked in one. When I heard it was good for Indian recipes and making them in a fraction of the time it normally takes, I was sold.
Stay tuned for some new Indian recipes I’m testing out this next week on the blog soon! My mom is here with us so I am going to fully take advantage of her expertise and try to perfect them before sharing.
Today, I thought I would share a few recipes I have bookmarked to try and see if you guys have any you have liked!
Minestrone Soup
Ever since we became obsessed with this Chicken Detox Soup, I had been on the hunt for more filling and tasty soups and this one fits the bill.
Beef Stew
I think this looks so warm and cozy! Stew’s always intimidate me mostly because I just don’t have the time and honestly never remember early enough in the day to start cooking.
Soy Free Asian Salmon
Salmon is about the only fish I can get Trevor to eat and since I rotate the same three recipes for it I figured this would be a great one to try!
Faux Rotisserie Chicken
OMG I buy rotisserie chicken’s all the time and would love a way to make them on my own! I am trying this over the weekend and will report back.
Chicken Tinga Tacos
Tacos and Mexican fare are always a win in our house and I will likely just serve these on lettuce wraps instead!
Short Ribs & Creamy Polenta
This is a recipe I always pull out to make Trevor on our anniversary or Valentine’s Day and then never do. Now that I found a way to make it in the Instant Pot, it is happening!
