while trying to eat healthier this summer trevor & i have both struggled with snacking! i do so well all day & then come home and shove everything i can find in the kitchen in my mouth. i decided to try and create some yummy & healthy snacks i could make sunday and leave around all week to avoid those binges.
these zucchini chips were some of my fav so i decided to share the recipe with you. it’s so simple and will only take you a few minute! chop up 3-4 zucchini’s into slices and toss in EVOO. then place the parmesan cheese, garlic powder, oregano, & salt and pepper in a bowl, just dip the slices in the mixture and throw in the oven at 450 for 8 minutes on each side or until they are crisped is to your liking! (ps i would suggest laying parchment paper down on your baking sheets while cooking)

1 cup shredded parmesan cheese
1 teaspoon oregano
1 teaspoon garlic powder
salt & pepper to taste
