Good morning!
How is everyone’s week going? I can’t believe we are heading into the last week of August. Has this month seemed to fly by for anyone else? I don’t know if it’s the start of school but we have been moving at lightning speed. Zahra starts preschool on Monday so we are getting geared up for that this summer and trying to soak up the last minutes of summer.
On that note, last week I had asked you all for any recent easy weeknight meals you had made and enjoyed and there were so many requests to share so I wanted to round them up here. If you have anything to add, feel free to leave it in the comments!

I thought I would also share what’s on my menu this week. I meal planned over the weekend and stuck to my recipes for the most part! We had dinner out last night which is why I only ever factor in 4 cooked dinners during a week. It prevents waste for us personally because we usually eat out once and/or make something quick like frozen pizzas one night.
What’s on my menu this week:
Harissa Sheet Pan Chicken – I was making this quite often and it fell off my radar for some reason, excited to bring it back!
Honey Ginger Salmon that I’ll serve with some Right Rice and roasted broccoli
Mediterranean Chicken (I just use this marinade) I’ll likely serve with brown rice and a cucumber/red onion/tomato salad and some greek yogurt tzatziki
Salad kit (Taylor Farms are my favorite) with grilled chicken, avocado and an easy dressing
