Morning friends! We have made it halfway through the week 🙂 I know we are all relying on healthy snacks full or protein that we can hopefully throw together with some pantry staples so I thought today’s post would be perfect.
I’m so excited to be back with a recipe and one that we love around our house! I’ve touched on this before but Zain is OBSESSED with prunes. I’m not sure when it started but he has always asked for prune pouches and even now we have to limit how many he has.
I started adding probiotic prunes to my breakfast smoothie or oatmeal a few months ago after my trip with California Prunes and the effects have been amazing. So, I thought I would try them out in our favorite energy bites and they have been a huge hit.
There are only a few simple ingredients and they store well in the fridge! I’ve made other energy bites with rolled oats but no one in our house ever seems to live the consistency. These are a lot more indulgent of a consistency and also taste amazing coated in coconut!

- 2 cups oats
- 1/2 cup Flax & Chia Seed Peanut Butter
- 6-7 California Prunes
- 1 Tsp Vanilla
- 3 Tbsp Local Honey
- 3-4 Tbsp Water, I add as I go to test it
- Combine all ingredients in your blender or food processor through the honey. As you mix add water slowly till you have the consistency desired.
- Once mixed, roll into balls and keep in fridge for up to a week.
Is the 1/2 cup of flax seed, chia seed and peanut butter a half cup of all those ingredients combined, or a half cup of each individually? Thanks.
