TGIF! i’m so happy its’ finally here and although it’s not a long weekend for me my parents are coming to visit while trevor heads out of town for a guy’s weekend so i’m so happy to have them here. the weekend will most certainly include lots and lots of food and some serious quality time with my nieces & nephew (who i can’t get enough of)
i know i’ve been posting some new dinners on my instagram and people keep asking for the recipes so i thought i would share a few of the ones i’ve been trying and my tweaks!
first off, skinnytaste is e-v-e-r-y-t-h-i-n-g. the site is so easy to navigate and find recipes for whatever you had left in the fridge. i linked a few of my favorites & would love to hear what new healthy recipes you are trying!
1. Quinoa Fiesta Enchilada Bake : i used the entire package of corn & black beans and doubled the chile adobo sauce, cumin, & peppers and it still wasn’t too spicy for us.
2. Crockpot Chicken & Black Bean Salad: we ate this both on salad and alone, great as leftovers! i didn’t make the avocado buttermilk dressing but instead used fresh salsa to top mine and i mixed sour cream with salsa for trevor’s.
3. Turkey Meatball Spinach Tortellini Soup: this is one of my new favs! i didn’t garnish with cheese (it had so much flavor without it) and used tri-color spinach tortellini.
4. Crock Pot Maple Dijon Chicken Drumsticks: no changes here, so easy and loved it!
