Mediterranean Quinoa

so, it’s been a LONG time since i’ve posted a recipe on the blog & i’m excited about this mediterranean quinoa. it might be because i’m always hungry and choose to cook & eat like a rabid animal and never remember to take pictures but i’m excited to start doing this more & sharing a bit of my home life…

for a while now i have been more aware of what i’m feeding my body. we love trying new foods & restaurants but i try to limit that to weekends and make an effort to eat clean at home. (more on why i made that change on the 16th when i participate in the real beauty blogger campaign)

i’m always looking for healthy eats that are quick to make (i tend to be exhausted when i get home from the office) and easy to snack on throughout the week.

this quinoa was no exception. i wanted something with just a few simple ingredients that i could toss together in a mixing bowl and fuel us all week & this literally did just that! trevor & i ate this every evening when we got home from work before dinner & loved it. it’s easy, healthy, & delicious and i’m trying this dish with a mexican twist next week so i’ll keep y’all updated…

salad fixins:

1 cup quinoa (cooked)

1 can garbanzo beans

1 chopped tomato

1 chopped cucumber

1 lemon juiced

1 tsp olive oil

salt & pepper to taste

directions:

cook quinoa according to package directions but in general it’s one cup quinoa to two cups water boiling and let cook for 15 mins, fluff quinoa, place in bowl.

chop remaining ingredients (tomato, cucumber) and add to bowl with garbanzo beans

squeeze lemon over top and sprinkle with salt & pepper to your taste

add in olive oil and mix together for a delicious snack!
