I don’t know about you but my meatless dinner recipes game is so weak. Both Trevor and I equate meat with meals and rarely ate vegetarian growing up. I have been trying my hardest to work vegetarian meals into our weeks for at least one meal and on a whole we usually stick to chicken and fish with a tiny bit of red meat.
The problem we both have is that vegetarian meals sometimes either leave us hungry or make us feel less healthy because so much was added to make it taste like it had meat. I decided to round up a few I have been testing out and love and hopefully get a few suggestions from you as well!
Roasted Red Pepper Alfredo: I go heavy on red pepper and love the spiciness.
Lo Mein: Easy meal with all our leftover vegetables!
Brussels Sprout & Mushroom Hash: Perfect for Whole 30 and so easy to switch out other ingredients if you aren’t a fan of sprouts or mushrooms.
Quinoa Stuffed Bell Peppers: A staple on veggie nights around here and so easy to throw together in a pinch!
Spicy Pad Thai Noodles: Yet to try but this has been on my list for weeks!
Quinoa Enchilada Casserole: Another staple around here. So filling and flavorful!
