8 Dinners You Can Meal Prep On Sunday

I know I shared how I was struggling to eat healthy on Instagram a few weeks ago, and loved all the healthy recipes you guys have sent me. I also picked up a spiralizer this past month and have been testing out recipes, can’t wait to share some of them with you later this month! 

Since Zain has stopped nursing as frequently as he did when he was first born, I’m sure my metabolism has slowed down. However, I’ve kept eating the same way I was before–which is far from clean. Since I find myself short on time, I tend to grab more unhealthy things and crave sweet and salty treats all the time. Guys, FRIES. I have a problem with them. Even though I know those things aren’t great for me, it’s a lot of stress eating that then leaves me feeling sluggish and bloated afterwards.

The shedding of my baby weight has also come to a halt in the past few weeks and I actually feel more out of shape now than I did before. I’ve decided to make a serious change and am trying out a few meal delivery services (send me your favorite recommendations!) and getting back in the kitchen. If I can get to the grocery on Sunday’s it’s much easier for me to meal prep for the whole week. Having things ready beforehand is the only way for me to ensure I won’t fall off the deep end again. If I have to take time to cook in the moment, it just won’t happen. I scoured Pinterest and the internet for some easy to make ahead meals and have been able to actually get these prepared and not feel like I’m missing out on flavor. They also have a ton of protein which is crucial for keeping me full and the snacking at bay.

Besides trying to get back on a healthy eating regimen, I have been trying to work out when I can. A few runs here and there and I finally made it back to my first post baby weight class. It felt great and I am hoping I can keep it up in the coming weeks. A huge bonus for getting back to the gym? New workout gear! I just got this new Outdoor Voices set in and am obsessed with their stuff. I will be sharing more on my current workout routine and my new gear in the coming weeks, so stay tuned! 

Hope you all have a wonderful weekend planned! I can’t wait to see my girlfriends from dental school today and have a playdate with all our sweet babies. It’s crazy how quickly this week has flown by and that we are already headed back to Chicago tomorrow! Happy Friday!
