6 Easy Weeknight Vegan Dinners

Jul 19, 2017

If there was one thing I knew I wouldn’t have much time for after baby it was cooking. Well, cooking and sleeping. I tried to take full advantage of the few weeks I had off before his arrival to not only prepare everything at home but cook and freeze some meals that would be easy to thaw and eat. The best piece of advice I got from a friend who recently had her second kid was ‘Nothing will make you more mad if you lose sleep to find something to eat’ so I was determined not to let that happen.

Since Trevor and I had both been trying out more Vegan and Paleo meals at home, I thought I would round up a few Vegan recipes I made beforehand and a some that I am still dying to try. If you guys have any that you love make sure to send them my way, I get so many great recipe ideas from you all so thank you!

Creamy Mushroom Risotto

Perfect for those nights when you want something indulgent without guilt!

Chickpea Curry with Potatoes

I love chickpeas so you’ll see a lot of them on here! This reminded me of an Indian dish my mom makes me so it had to make the list.

Stir Fry is one of our weeknight staples and this one didn’t disappoint!

Baked Sweet Potatoes with Garam Masala Chickpeas

Garam Masala is one of my favorite spices! If you haven’t tried it, I highly suggest it and if you need some other recipes with it included just shoot me an email.

Healthy Fettuccine Alfredo

A pasta dish I love but never usually eat because it’s usually so unhealthy. I was excited about this healthy version!

  1. Great round up! We love risotto at our house, but it’s been a while since we made it! That pasta also looks really good.
