If there was one thing I knew I wouldn’t have much time for after baby it was cooking. Well, cooking and sleeping. I tried to take full advantage of the few weeks I had off before his arrival to not only prepare everything at home but cook and freeze some meals that would be easy to thaw and eat. The best piece of advice I got from a friend who recently had her second kid was ‘Nothing will make you more mad if you lose sleep to find something to eat’ so I was determined not to let that happen.
Since Trevor and I had both been trying out more Vegan and Paleo meals at home, I thought I would round up a few Vegan recipes I made beforehand and a some that I am still dying to try.
