I was so happy to get such an amazing response the last time I shared a recipe from my mother’s kitchen and was even more excited to actually have my sweet mom in town helping me create this one! Indian food can be so intimating and I would always avoid cooking it because I saw how much time it took my mom every day. Now, I crave those meals and am determined to find a way to make it feasible for me and share that with all of you!
Despite her refusing to be in pictures (can you blame her?) she helped me create a super easy Tandoori Chicken recipe that honestly anyone can make. It takes less then 20 minutes to marinade and is easy to bake in the oven or grill if the weather permits. For the Tandoori Masala you can grab it at your local grocery store usually in the International Aisle or Trader Joe’s.
Start by grabbing whatever chicken you prefer from drumsticks to breasts or wings. I prefer breasts so I started with one package which lasted Trevor & I a few meals. Cut the meat into squares that can easily be skewered in case you can grill! Now in a bowl, mix together everything but the olive oil and yogurt. Add in the chicken and mix together thoroughly!
Refrigerate that overnight or for several hours and about an hour before you are ready to grill or bake pull it out and add in the yogurt and olive oil. Mix everything together and refrigerate for one more hour. If baking set your oven to 350 degrees and cook for 15-20 minutes!
I usually serve it with basmati rice and it’s so easy to warm up on the stove for leftovers!
- 1 Package Organic Chicken Breasts
- 4 Tsp Tandoori Masala
- 3/4 Tsp Garlic & Ginger Paste
- 3/4 Tsp Chili Powder
- 1 Tsp Lime Juice
- 2 Tsp Yogurt
- 1 Tsp Olive Oil
- Cilantro & Fresh Squeezed Lime to garnish
- Combine chicken & all ingredients through Lime Juice
- Refrigerate for at least 3 hours
- Add Yogurt and Olive Oil and refrigerate for an additional hour
- Bake chicken for 20-25 minutes at 350 degrees

Awww, I’m so glad! You can – I think with fish you may want to adjust the timing just based on preference and sometimes I like to pan fry the fish instead too!
Looks great! I have a question though: It says to combine chicken with ingredients thru lime juice, and then after refrigerating, to add the yogurt and lime juice… should it be yogurt and oil, or should the oil be combined in the first of those steps, and the lime juice in the second? Can’t wait to try this!
