so i am going to be honest this recipe takes some time & patience. i have been dying to try a cauliflower pizza crust for some time and the time required has always stopped me. i was happy to finally have an afternoon to myself to try it out.

the crust is easier than you think and you can really top it with anything you like. i just happen to have an addiction to mediaterranean flavors if you haven’t realized by now. the crust is low calorie, low carb, & gluten free so you can feel guilt free enjoying this all summer.

start with a large head of cauliflower and cut all the florets off. rinse them in water and don’t worry about drying them off it will help to have a little moisture. after rinsing throw those florets in your food processor and blend till you have a ‘rice’ texture (some chunks are fine)

at 375 degrees spread out cauliflower on your pizza pan and cook for 15 minutes. after removing from the oven strain any liquid out in a cheesecloth or strainer. Now combine cauliflower with cheese, egg, seasoning, salt & pepper.

Increase oven to 450 degrees and place some parchment paper on pizza pan. now spread crust and cook for 15-20 minutes. after removing add any toppings you wish and cook until cheese melts to your desired liking.

i added some extra cheese but it totally didn’t need it. if you are wanting to cut out dairy or calories feel free to skip it. let me know how it works for you!

ingredients (crust):

1 large head cauliflower

1 large egg

1/2 cup parmesan

1/8 tsp salt

1/4 tsp black pepper

1 tsp italian seasoning

ingredients (toppings):

marinara sauce to cover (i use Muir Glen Organic)

1/2 cup red onion

1/4 cup fat free feta cheese

1/4 cup fresh mozzarella cheese

1/2 cup red onion

1/4 cup black olives

fresh parsley to garnish
