TGIF guys! I am so sad to see this week come to an end since it has been so nice having Trevor around and spending so much time doing fun new things with Zain. We are headed down to the Museum of Science and Industry this morning and I can not wait! I worked with them a few months ago and got lost in the museum for hours, alone. I had so much fun exploring the place (it’s huge and beautiful with so many cool interactive areas) so I am excited to see Zain explore it today!
As part of trying to improve my healthy and workout routine, I have been trying to incorporate more vegetarian meals into our routine. I’m a big believer in everything in moderation so while I don’t subscribe to any one ‘diet’ I do like to mix in more meatless meals. The rate limiting factor has always been Trevor—does anyone else’s husband think a meal without meat is not a meal? Haha!
Slowly but surely, I’ve convinced him they are just as filling and delicious so we have been trying it a few times a week and I eat mostly plant based lunches during the week. It’s been working for us without seeming limiting or like too much work. I’ve found anything too drastic just ins’t sustainable for us and therefore we just end up giving up so these small little changes have been amazing!
I thought I would share a few meals we’ve had on rotation and some that are on my list and see if you all had any favorites to share:

We have tried tons of different veggie pasta’s! Our favorites are the lentil one from Trader Joe’s (cook accordingly) and Cappello’s fettuccine. Also, if you are short on time Trader Joe’s Vegan Pesto is amazing!
