Good morning friends! Should we all take a minute to celebrate the fact that we made it halfway through this week? I think so.
So far, this week has proven to be a little more difficult for us over here. I think Trevor being gone is really starting to wear on us, especially me. With so much unknown it’s hard to pinpoint an end date in sight. On top of that, I will be leaving the house for the first time tomorrow for my doctor’s appointment. I have my gestational diabetes test and a routine ultrasound which is exciting and also a little scary. Having not seen anyone in weeks, I am just hoping the office is near empty and I can get in and out quickly.
On a more positive note, the weather here has been amazing which has allowed us lots of backyard play time and is an overall mood booster I am thankful for. I know so many of us are looking for new ways to create meals from staples we all have on hand so I thought today’s post would be a helpful one.
While I was searching for a few new recipes myself, I came across several that I hadn’t tried before and added to my list so I thought I would share! If you have any favorites feel free to leave them in the comments and I hope you all are surviving your week!
Chipless Turkey Nachos
This first one is one of our favorites to make and really easy to substitute! You can always use tortilla chips if you don’t have peppers and really sub any meat or toppings to your liking!
Pesto Pasta
Garlic Baked Penne
Hariyali Spaghetti
Vegetarian Enchiladas
Instant Pot Lasagna Soup
15 Minute Lo Mein
Cheesy Kale Pasta
