With our last minute travel this past weekend, I definitely need help in the kitchen. Not only with getting some nutrition back in our systems but quick, healthy meals I can prep ahead of time. I scoured Pinterest for easy recipes (don’t be scared by the beautiful pictures) and have already meal prepped several of these yesterday. I’m sure you noticed when you read this post but I don’t have a ton of time to whip up intricate meals for lunch and dinner these days so these are perfect!
I think half the battle with meal prepping is actually getting to the grocery. I don’t know about you but I dread it these days. I’ve started going at very odd times so I can hopefully avoid the crowds and making sure to pick up something super easy for dinner that night. Anyone else have these high hopes for dinner on the day you grocery shop and then order take out? It’s a problem.
Today is a busy one over here! Although I love being at home with Zain I am so behind on work and have some travel coming up so I am going to try to get as much done as I can this week and cross my fingers I don’t lose it. Hope you guys are having a great week so far and cheers to a spring detox!
