Most everything I included below is low carb but this is a great easy one on toast. Just smear avocado, eggs any way you like, cherry tomatoes and sprinkle with black pepper and everything but the bagel seasoning from Trader Joe’s!

Sorry for the bit of radio silence yesterday, it has been a crazy week and I haven’t been feeling great. Hoping it’s nothing big and passes soon but I spent yesterday running a few errands between work and getting my lashes filled in. Beyond blog work I have been patiently waiting to start my dental job! I was originally scheduled to begin September 4th which is why I originally started Zain in part time daycare. Although, he has now adjusted so well and loves it so much that I’m so happy he’s there a few days a week. Unfortunately, all my dental paperwork is taking so long and it’s driving me bananas. It’s been over two months since we submitted everything to the insurance companies and we are still waiting! Next week I will actually be going in for a training day and let’s all cross our fingers I will be able to start soon!
Since I’ve been working from home without Zain a few days a week I have gotten significantly more done (although I do miss him!) but also find myself eating way more! Quick, healthy snacks were never really a priority for us since we usually weren’t home much during the day to snack. However, since Zain eats everything I am trying to become more creative with our snacks and always like to have healthy options on hand. Otherwise, I get lured into animal crackers and before you know it I have finished the whole box and Zain never even knew I bought them. This happened a few weeks ago but that’s neither here nor there.
