Happy hump day guys! I’m so excited to have made it back to my in laws in Kentucky for the holidays and disconnect a bit. The drive was a bit foggier than expected and since Trevor worked overnight I made sure to listen to the new episodes of Serial and The Martian to keep me awake.

I am hoping to spend today curled up on the couch in the rain watching movies all day with family and maybe squeeze a hike in later. I hope you guys are wrapping your work week’s up if you haven’t already and get a chance to try these bars!

I published these red velvet cheesecake bars in my Holiday Guide but wanted to share it with all you here too! A few weeks back we were headed to Kelly & Mitch’s house for a housewarming party and I wanted to bring something more than just a bottle of wine. These were the perfect solution and so simple and but so yum!

They’re fairly easy from start to finish and not made to look ‘perfect’ so make sure when you layer the cream cheese over the red velvet cake mix you place it down wherever you see fit! I used my Kitchen Aid mixer to create the consistency I needed but you could always use a hand mixer as well.

Make sure you give these some time to cool before trying to cut them in squares and enjoy the holidays and these delicious treats!

Ingredients
  1. 1 Box Red Velvet Cake Mix
  2. 1 Large Egg
  3. 1/2 Cup Butter
  4. 1/2 Cup Cream Cheese
  5. 1/2 Cup Condensed Milk
Instructions
  1. Preheat your oven to 350 Degrees
  2. Spray a 9x9 non stick pan with Olive Oil or line with parchment paper
  3. Mix cake, butter & egg till thick consistency
  4. Combine cream cheese & condensed milk till thick
  5. Place 1/2 of Cake mix on bottom of pan and layer cream cheese on top in sections
  6. Cover with remaining cake mix
  7. Cook for 25-30 minutes
  8. Cool before cutting
