Wow, this week has been a crazy one. We have had a lot going on and I am not going to lie, I’m already looking forward to Sunday. Trevor is on call and working Saturday so I am excited to get a little me time and finally make it to Flywheel Sunday.
You guys sent me so many messages about my recipe roundup a few weeks ago, so I thought I would share what we’ve been trying this week and on deck for next. I usually find most of my recipes on Pinterest so make sure to follow along over there to see everything and here are a few quick healthy dinners to add to your list!
One Skillet Cashew Chicken Stir Fry
This looks super simple and any dish that is a ‘one pot’ situation is a win in my book! Also, I usually just grab the fresh stir fry veggie containers instead of buying everything separately to save time!
Spicy Tuna Avocado Wrap
I don’t why but Trevor and I have both been craving tuna lately! I’m not sure I even remember the last time we ate it. We’re still trying to do low carb-ish so I am swapping out the tortillas for pieces of lettuce!
Slow Cooker White Chicken & Quinoa Chili
I’ve made this before because a follower on Instagram sent it to me and we loved it! I’m really trying to keep one slow cooker recipe on the menu each week for ease!
My Whole 30 Butter Chicken
Ahhh, this is a staple of mine I love! I always serve it over cauliflower rice and I promise you that you will not be disappointed with flavor. It’s also Whole 30 compliant if you are doing that!
Beef and Cabbage Stir Fry
I thought this looked tasty and like how it was using slaw as a base instead of rice. I think I’ll add some more spice to the recipe and top with some chili sauce!
Garlic Honey Lime Shrimp
Another item we’ve been craving, shrimp! This looked so easy and really easy to throw together!
