when i tell you these cookies were ah-mazing i am not exaggerating! i was excited to try out these gluten free cookies for valentine’s day and even more excited that they only had 4 ingredients. i had seen different gluten free recipes with or without some of these components and thought i would try these and see how they went!
they were so easy & tasty it’s almost a sin. i used all natural peanut butter, a brown egg, sugar, and peanut butter and chocolate chips. just mix the ingredients together in a bowl by hand (much easier clean up) or in your mixer and then spoon onto a baking tray. you can line the pan with parchment paper but i didn’t have any so just rubbed a little canola oil on the pan before placing the dough on.
once you’ve spooned the cookies on i flattened them out a little since there is no flour and the cookies won’t really be rising. set your oven to 350 and throw them in for about 7-8 minutes & viola!
they are so yummy i couldn’t them around for long and so easy i’m sure they will be on repeat quite often. hope you enjoy!

1 cup sugar
1 cup all natural peanut butter
1 egg
1/2 cup PB & Chocolate chips (i probably added a few more)
Tasty! And I love that these cookies only have 4 ingredients. However I think there might be an error in the cooking time. I had to bake mine around 15-17 minutes before they were structurally sound.
so glad you liked them! oh good to know, i had some tell me they baked less so maybe my oven is crazy haha. my husband also likes smooshy cookies 🙂
