Has anyone else been struggling with breakfast lately? These healthy make ahead breakfasts have been lifesavers in our house recently so I thought I would share our favorites. Trevor has been leaving earlier in the morning and I don’t usually get up till 6:30am so the idea of us having breakfast together just isn’t a reality. I’ve been trying to prep things on Sunday for the week and these quesadilla’s that are freezer friendly are the best.
Although breakfast can sometimes feel like a hassle when I really just want a few more minutes of sleep it really does start my day off on the right foot. If I rush and eat something light with no protein I am starving within hours and struggle all day not to overeat. I got so used to eating eggs and a protein when we were on Whole 30 and it’s something I have religiously stuck with. What do you usually do in the morning?
Hope these recipes help you as much as they do us and happy Tuesday!
Hash Brown Egg Nests with Avocado
Baked Oatmeal with Blueberries
Spinach, Egg & Feta Breakfast Quesadilla
Sweet Potato, Black Bean & Egg White Breakfast Burrito
Spinach & Red Pepper Mini Frittatas
Tofu & Sweet Potato Breakfast Scramble
Banana Chocolate Chip Zucchini Muffins
That breakfast quesadilla looks divine! Why have I never thought of that before??
