Nothing quite screams summer like a big pitcher of Iced Tea and a delicious dessert. With 4th of July right around the corner, I thought it would be the perfect time to share a healthy dessert recipe you can make extra festive. I’ve been working on a similar concept to my previous pie recipe and I really love how this one turned out!
This fruit pie can be topped with any fruit you prefer! I decided to stick to the red and blue berries for 4th of July but it’s just as delicious with everything from kiwi to peaches. The crust is super easy to throw together and you can feel good about eating this oat based one that’s gluten and dairy free! I also tried to keep the topping a little healthier with Greek yogurt but you can always try the cream cheese and sour cream filling from my other pie recipe if you want something richer.
Since my mom is in town helping us with Zain, I threw this afternoon treat together for us to enjoy. When he goes down in the afternoon, my mom and I try to relax and enjoy a little bit of down time together. That usually consists of tea or coffee and a good game or cards or scrabble, so glamorous I know!

I know I’ve talked about this tea brand before but I’m a huge fan and love their fresh flavors and commitment to sustainability. It’s so easy to brew over ice and the Peach and Citrus flavors are my favorites!

- 2 Cups Old Fashioned Oats
- 3/4 Cup Oat Flour
- 3/4 Cup Honey
- 3 Tbsp Coconut Oil
- 1 Tsp Vanilla Extract
- 1 Tsp Cinnamon
- 1/8 Tsp Salt
- 1 Cup Full Fat Plain Greek Yogurt
- 2 Tbsp Honey
- 1 Tsp Vanilla Extract
- 1/2 Cup of Each Fruit
- Preheat Oven to 350° F
- Spray a 10 inch cake pan with Olive Oil Spray
- Combine all crust ingredients in bowl and mix well
- Layer into cake pan and press firmly with hands or back of spoon
- Bake in oven for 10 minutes and remove to cool
- *I recommend making the crust the day before and allowing to cool before topping the next day!
- Combine filling ingredients and fill pie crust
- Top with fruit and serve!
