Good morning!
I am excited to share another one of our favorite recipes of the year with you all today. This salad is perfect to make weekly, take to parties or use as a side with my Greek Chicken Sheet Pan Recipe.
You probably have most of the these items on hand and if not, they are all affordable and easy to grab at the store. I usually make a bigger batch of this and use it for a few days!
It’s supposed to be warming up soon which makes me crave more salads and healthy options! I’m fairly certain that’s why everyone in California is so fit and healthy…when it’s sunny you crave juices & salads and when it’s cold all I want is mac n’ cheese and fried chicken.
Last week I was racking my brain for some easy dinners & snacks to throw together and remembered this old favorite. Chickpeas are one of my favorite ingredients to play with because they are filling and I love the taste. Lately, Trevor has been studying after work and coming home late so I end up snacking on every unhealthy item in our cabinets till I make dinner at like 8 for the two of us.
This salad was so easy to throw together (seriously 10 minutes) and lasted us through most of the week. Grab these few things from the grocery and just chop, toss together in a bowl and dress. The dressing can be mixed easily and feel free to add salt and pepper to your taste!

- 2 cans (15 oz) garbanzo beans
- 1 cup red bell pepper
- 1 cup Grape Tomatoes
- 1 cup Cucumbers
- 1/4 cup Red Onion
- 1/4 cup fat free feta cheese
- Parsley To Garnish
- 1 tbs lemon juice
- 1 tbs red wine vinegar
- 1/2 tsp ginger
- salt & pepper to taste

Yum! I’m not a fan of traditional leafy salads so have been exploring more quinoa and lentil recipes for lunch lately, but I’ve never seen a Mediterranean one like this! Definitely saving– thanks for sharing!
oh so good to hear! mediterranean is my go to & i did another version with quinoa a while back and it was good too. they are so tasty and easy to snack on! let me know how you like it!
Oh yea I’m so glad and I agree leafy salads can get old quickly but this keeps me full!

whats the serving size for it?
Sorry for the late response, I never saw this! I usually serve 4 with this combo!
I really want to try this! It looks so good! But I do have a question. Lol
In regards to the dressing, does the ginger have to be grated or do I get ginger in liquid form?
I have not actually done anything with ginger except buy Tazo teas that contain ginger; and I would like to not mess up this recipe.
