I am so happy to see Friday and can’t believe we are really moving in to our first home tomorrow. The floors are finishing up and we have cleaners set to come over and give it a good scrub down before we move in tomorrow morning. Moving in is going to be such an amazing experience but also a farewell to the wonderful summer we’ve had. Trevor had the month of July off in between jobs and we moved into my parent’s while our house was being worked on.
Although we miss having our ‘own space’ being together as a family has been such a wonderful experience. My parent’s love being with Zain and seeing them wake up together has been my favorite. We try to spend lazy morning together before everyone leaves for work and I’ve actually been making some more exciting breakfasts.
On constant rotation is this new blueberry spread on english muffins for Zain and us. I started experimenting with this Brummel & Brown Yogurt Spread and have been using it in this spread weekly. It’s made with plant based oils and real yogurt so has less fat and calories than traditional butter which is great! It’s simple to make which is great for weekends and you can top just about anything with it! We’ve tried it on oatmeal, pancakes, bagels—you name it.

- 1/2 cup Brummel & Brown Original Spread
- 1/2 cup Fresh Blueberries
- 2 Tbsp. Water
- 1 Tbsp. Packed Brown Sugar
- Bring 1/2 cup blueberries, 2 Tablespoons water and 1 Tablespoon packed brown sugar to a boil.
- Reduce heat and simmer for 5 minutes, stirring occasionally.
- Remove from heat and allow to fully cool at least to room temperature
- Mix blueberry sauce together with ½ cup Brummel & Brown Spread until blended
