Last week I finished up work early and the crisp weather (I’m trying to be positive) had me craving some warm homemade bread. Well, that and the fact that I haven’t really had carbs in over a month. I was too tired to stop at the grocery but luckily had some ripe bananas hanging around.
I pulled together what I had at home and with a little help from my pinterest decided to add dark chocolate chips & I think the result was pretty amazing. One tip is to make sure you mash the bananas very well. Mine weren’t as ripe as I would have liked so it took quite the pounding to get them to mush. If you leave big chunks it’s okay but when you check the bread with a toothpick to see if it’s done you may think it’s not when in reality it is and you are just directly sticking your toothpick into a piece of banana (this did not happen to me I don’t know what would make you think that…)

- 3 ripe bananas, mashed
- 2 egg whites
- 2 tbsp butter (i use all natural)
- 1 1/2 cup whole wheat flour (i use Arthur's)
- 1 cup brown sugar
- 1 cup sugar
- 1/2 cup unsweetned applesauce
- 1/2 cup dark chocolate chips
- add bananas to mixing bowl and mash well
- add all other ingredients and mix thoroughly
- spray 9x11 bread pan with olive oil or coat with butter
- pour batter into pan evenly
- bake at 330 for 30-35 minutes
