A Valentine’s Day Treat

warning: this post does not include fashion!

although i’m a girl who loves fashion & styling, i also LOVE eating. i don’t just work out to feel good (isn’t that what it’s supposed to be for) it’s mainly so the husband & i can maintain our foodie lifestyle. we tend to eat out at least twice a weekend and now with blogging i find myself having happy hour drinks much more often :/ to balance this out i always try to prepare healthy meals & treats at home! this was a recipe from the fabulous Skinny Mom i found here and then tweaked just a bit. i prefer to keep my ingredients all natural if i can but still want things to taste delicious because if there’s one thing my husband won’t eat it’s “diet” food.

so, to get started just pick up these items at your local store (most of which i already had around the house, which is key!)

  • 3 very ripe bananas
  • ½ cup unsweetened applesauce (i used jewel-osco brand)
  • 1 tbsp reduced fat butter (i used heart healthy butter)
  • 2 egg whites
  • 1 ½ cups whole wheat white flour (i used uncle arthur’s)
  • ½ tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ cup light brown sugar
  • ½ cup sugar
  • 1 tsp vanilla extract
  • ½ cup semi-sweet dark chocolate chocolate chips

 

you want to start by mashing your ripe bananas with a fork in a mixing bowl.

while letting that sit, mix together the butter, applesauce, brown sugar, sugar, & vanilla

next, add the egg whites to the bananas and then combine this with your dry ingredients. i just used a hand mixer to get everything meshed for a few minutes.

use whatever bowl you just emptied to combine the whole wheat flour, baking soda, baking powder, & salt (anyway you can reuse and avoid more dishes is a win-win in my book!)

then combine everything together and add in your chocolate chips! (the BEST part)

once everything is mixed nicely (4-5mins), add the mix into your loaf pan or in my case your heart pan…awwwwww

pop this in the oven for 30-35 minutes at 330° F and viola! you have won everyone over with a delicious & guilt free (kinda) treat for the holiday!
