Good morning and welcome home to us!
Vacation was much needed and aside from the very long car ride, the week was spectacular. I was so thankful we were able to enjoy some sunshine and experience the beach with the kids. I am working on a full recap post that will have all the information on our rental and answer all of your questions so bear with me.
Today, I am sharing some recipe inspiration I figured we could all use. I don’t know about you all but I am fresh out of inspiration in the kitchen and have become so bored with our meals. I think it is a bit of quarantine fatigue since we have been eating at home so often and a hint of exhaustion.
Despite wanting to mix it up for the past few weeks I haven’t because I dread recipes that take too much effort which is where this idea sprouted from. I thought it would be refreshing to follow a plant based menu for a week and just reset our systems, especially post vacation.
I will be cooking each of these recipes next week and think they all look amazing without being intimidating. This week will be about survival since we are just getting home and trying to get settled and reorganized.
