it’s time for the holiday weekend!!! thank goodness because i don’t know about y’all but these past two weeks have seemed to have no relief…

i’m excited to head to my in-laws for the holiday and have some relaxing time by the lake. before heading out i wanted to share a couple recipes i’m going to be whipping up this weekend that you can enjoy guilt-free (kinda)

this strawberry shortcake is one of the easiest desserts to assemble and is perfect for taking to the beach, lakehouse, or a cookout! fresh organic fruit, fresh made angel food cake, & cool whip is all you need! pair that with a delicious prosecco & coconut water ombre cocktail and you are set for the weekend!

coconut water is amazing for your health & has properties to combat hangovers so you’re really doing some prevention for the weekend. on a sidenote, this drink is delicious with or without champagne so if you’re expecting or just not drinking you can whip this up and enjoy it too! the recipes are below and they’re totally adjustable based on preference, let me know how you like them!

red, white, & blue shortcake:

1 package angel food cake (i use fresh made from mariano’s)

organic strawberries & blueberries

cool whip (you can use full fat, light, or fat free)

cut angel food into squares and layer cool whip & berries on top and simply repeat!

*if you are packing for travel mason jars work perfectly! just pop the lid on & throw it in your bag

 

coconut prosecco ombre cocktail: (for a pitcher)

1/2 bottle prosecco

1 bottle coconut water (i used unflavored but pineapple tastes great too)

splash of grenadine

splash of pomegranate juice

squeeze of lime

berries to garnish
