Do you ever stay in on a Friday night? We always do. I’m not sure about you guys but after work on Friday we are always dead tired and never have even one ounce of energy to do anything. Maybe I am an old soul but we stopped making plans on Friday nights years ago. It’s the perfect time to come home, take a bath & enjoy some dinner on the couch with a good movie, a glass of wine & Trevor. We usually also do the exact same thing on Sunday night – except this time we are usually at my brother’s and spending time with our nieces and nephew.

Things can be crazy with 3 kids under the age of 3 so we usually try to cook or bring over something to make. I’m not sure about you but my mom made us STOUFFER’S® lasagna alllll the time growing up. For a while I thought it was her baking it from scratch but the woman can not be expected to be amazing at Indian and American food. It grew to be one of our favorites and always reminds me of home. It’s so nice that it’s easy to snag at Walmart and I love both the cheese & meat lovers lasagna & let’s not get started on the Macaroni and Cheese. The lasagna with meat comes in the perfect family size and is made with real mozzarella and no preservatives. Same goes for the macaroni and cheese & you can pick it up in either the family or party size – trust me  you want the party size! Trevor’s favorite is the meat lovers lasagna and that has not only the ground beef but pepperoni and Italian sausage and is sure to win over any meat lover. They all taste amazing & I have always cooked them in the oven (I have never tried the microwave but I think if you have the time definitely go the oven route – the way it crisps the cheese is perfect) The meals are easy to cook, made with real cheese and taste just like home. Since figuring out the entree for dinner is usually half the battle you can relax and just throw together a few sides!

Here’s a few tips & ideas for sides:

Toss Together A Salad

It’s easy to pick up some stuff for a House Salad and I topped ours with avocado and cherry tomatoes. I decided to make a yogurt ranch dressing to try to keep us on the healthier side but you can always pick up a ready made dressing to save on time!

Bake Garlic Cheese Bread

Picking up a loaf of French bread is so affordable and I just slice it into small sections, lightly coat one side with organic butter and sprinkle with garlic powder and black pepper! Toss it in your toaster oven for just a few minutes and  you can always top it with cheese too!

Make A Yummy Dessert

There are so many options for dessert but this dark chocolate cake with homemade frosting and berries is my family’s favorite! I usually just pick up a box of dark chocolate cake and bake it in two 8′ pans. Make sure to layer icing in between the two cakes and cover the outside. After that you can cover as much or as little with raspberries and blackberries and sometimes I like to sprinkle it with powdered sugar on top.

Greek Yogurt Ranch Dressing

Ingredients
  1. 2 Cups Greek Yogurt (I prefer Non Fat but Full Fat will give a creamier texture)
  2. 3/4 Cup Almond Milk
  3. 2 Tsp White Wine Vinegar
  4. 2 Tsp Dried Parsley
  5. 2 Tsp Black Pepper
  6. 2 Tsp Salt
  7. 1 Tsp Dried Dill
  8. 1/2 Tsp Garlic Powder
  9. 1/2 Tsp Onion Powder
  10. 1/4 Tsp Dried Thyme
Instructions
  1. Combine ingredients and refrigerate for two hours before serving!

Chocolate Cake Icing

Ingredients
  1. 6 Tbsp Unsweetened Cocoa Powder
  2. 5 Tbsp Evaporated Milk
  3. 3 Cups Confectioner's Sugar
  4. 6 Tablespoons Butter, creamed
  5. 1 Tsp Vanilla Extract
Instructions
  1. Slowly beat together all ingredients till creamy
